I have bought a lot of preused MEOS recently, but I'm not sure what the size of the cover should be for a newborn? The baby isn't born yet but we aren't expecting it to be very large; on the other hand the diaper itself is quite big because it's one size. So, what do you think will fit the best?
I'm not a UK/US resident, but I think I'll be able to buy most covers online from UK.

The x-small covers won't fit over the One-Size. Although they're the same size range as the smalls they're designed smaller to fit over the newborn Sandy's or infant sized prefolds.

So the smallest you can go is the size small. I haven't been a huge user of the One-Size on newborns but I think that's where I'd start, especially if you're not expecting a huge baby. It's common to skip a size here and there but I don't think many people skip the size small (I think it's more common to skip either the medium or medium/large).

The one-size wouldn't have been my first choice for a newborn either, but for now they will be our back-up until we can figure out how many smaller nappies we can afford. Maybe we will just get a few sized nappies and then use muslins, if the OS turns out to be to big.

I agree with Karen that the smalls would be a good idea.  Baby won't be in them for long, but they can really help with fit.  For what it's worth, I used the OS on my 6.5 lb baby with no leaks--the OS will work from birth, but it is a bulkier look than sized nappies or flats.
If you think you might be going with muslins or terries, two thoughts:  
1) although I really prefer the Airflow, the Rikki wrap would be more versatile for accomodating nappies that aren't snapped.
2) you might want to look at something called a snappi (think it's called a nappy nippa in the UK, same thing), which works to hold flat nappies together (as opposed to just laying it in the wrap, or using pins).

Does it matter whether I use the Rikke or the Airflow in small? I'm thinking about containment, as I've heard it should be more of a problem when the baby is being breastfed. I have the Airflow covers in the larger sizes already as they came with the diapers I bought, but medium looks a little large for a baby.

I always had trouble getting the Rikki set just right--esp. with my pudgy guy--and making sure the diaper doesn't peek out where the leg gussets meet.  Personally, if you aren't going to be using the cover to hold in the diaper (like a prefold or flat), I'd still probably go with the Airflow, but that's me.  Many people love Rikkis, and they will both work very well.  I used the OS with AFs and Rikkis for both of my breastfed boys, and had very, very few leaks.  My first son was a super-pooper who went every feed and could blow out of any disposable, but the OS kept it in--worst case a little on inside of the cover, but even that was rare.  Honestly, once I switched to ME diapers, my life got waaay easier, since I wasn't washing poop off anything but diapers anymore, and we eventually even started travelling overseas with them, since our experience of travelling with disposables was horrible.  My second son was one of those who went every 10 days, and it was simply cataclysmic, so that would occasionally make it past the cover, but I honestly cannot consider that a shortfall of the diapers or covers.
